Pasta with Vegetables
½ lb. cooked pasta
2 tbsp. olive oil
1 small onion, chopped
1c. broccoli, cut up into small pieces
1 clove garlic, minced
1 (14 oz.) can diced tomatoes
½ tsp. basil
Dash pepper
2 tbsp. Parmesan cheese
1. Prepare pasta according to the directions on the box.
2. Heat oil in a small fry pan.
Sauté garlic and onion until tender. (about 2 min.)
3. Add tomatoes, broccoli, basil, and pepper. Simmer covered for 5 minutes.
4. Place cooked pasta in a serving bowl. Pour tomato/vegetable mixture over the pasta. Toss .
lightly and serve. Sprinkle with Parmesan cheese, if desired.
5.. Serve immediately.
