Pumpkin Chocolate Chip Muffins

1 c. pumpkin puree

1/3 c. canola oil

2 large eggs

1 c. sugar

1 1/2 c. flour

1 tsp baking powder

1/2 tsp. baking soda

2 tsp. pumpkin pie spice

1 c. mini- chocolate chips

1.              Preheat oven to 350 degrees.  Line or grease a (6) muffin pan.

2.             In a large bowl mix together the flour, baking powder, baking soda, and pumpkin pie spice.

3.             In medium bowl, beat together the pumpkin, oil, egg, and sugar.

4.             Gradually add the liquid to the dry.  Mix, but do not over mix.  Fold in the chocolate chips.

5.             Carefully fill each muffin cup up about ¾ of the way.

6.             Bake for 25- 30 minutes.  Cool in pan for 5 minutes. 

7.             Enjoy!
