Chocolate Chip Oatmeal Raisin Cookies
1 c. flour
½ tsp. baking soda
½ c. butter or margarine, softened
6 tbsp. brown sugar, packed
6 tbsp. white sugar
1 egg
½ tsp. vanilla extract
1 ¼ c. quick oats
1 c. raisin/chocolate chip mixture
Day 1:
1. In a large bowl, cream together the margarine and sugars.
2. Add the egg and vanilla and continue creaming until light and fluffy.
3. In a small bowl, mix together the flour and baking soda.
4. Using a wooden spoon gradually add the dry ingredients to the creamed mixture. Stir well.
5. Add the oats, chips and raisins. Mix.
6. Wrap and refrigerate.*
Day 2:
1. Preheat the oven to 375 degrees.
2. Using two teaspoons, drop the dough onto the cookie sheet, about 2 inches apart.
3. Bake for 10-12 minutes or until golden brown. Transfer to a wire rack. Cool and serve.
* This can be done without chilling the dough!
